大菜粥



Ingredients:
大菜
三成肉
虾米
Garlic
Ginger

Method:
Fry chopped garlic, 虾米 and 三成肉 in a little oil.
Add finely chopped 大菜 (add the stem first, followed by the leaves).
Add water and ginger and simmer for around 30min.
Add in washed rice and boil till cooked.

Chicken Mayo Sandwich




Ingredients:
1. Chicken breast/thigh
2. Mayonise
3. Green apple
4. Lemongrass
5. Ginger
6. Salt
7. Ice lettuce
8. Butter
9. White bread


Chicken mayo:

1. Steam chicken with lemongrass, ginger slices and a pinch of salt, until cooked.

2. Peel cooked chicken meat into thin slices.

3. Cut green apple into bitesize cuboids, and soak in salt water for awhile.

4. Mix chicken and green apple well in mayonise.


Sandwich:
1. Spread butter on bread.
2. Add chicken mayo and ice lettuce.

Soup Bases

1. Dried mushrooms
2. Dried scallops

Soak mushrooms and scallops in water for about 1 hour. Bring the water to boil and simmer for 2-3 hours. Add sesame oil and light soya sauce to taste.


(Vegetarian)
1. Black sugar canes
2. Sweet corns
3. Carrots

Cut ingredients into smaller pieces. Bring water to boil and simmer for 1-2 hours.

Yam Sago

Boil yam in water until soft.
Add in pre-pared sago, sugar and fresh milk.

Hong Zao Mee Sua

Boil mee sua in water until soft.
Drain water.
Pour in one rice bowl of hong zao.
Boil with meat and wolf berries.

Sambal Chilli Ladies Fingers

Stry fry chopped small red onion, cut ladies fingers and carrot with sambal prawn and maggi chilli sauce until cooked. Do not add water.
